Menu Plan Monday

Here's what's on the plan for this week:

Monday - Going to try Crockpot Brown Sugar Chicken for the first time, served with rice and veggies

Tuesday - Pasta Bake, Garlic Bread

Wednesday - Meatloaf, Mashed Potatoes, Green Beans

Thursday - Pineapple Pork Roast, Rice, Broccoli

Friday - Lemon Pepper Fish, Mac and Cheese, Peas

Saturday - Indepedence Day! Hot Dogs, Baked Beans, Potato Salad


Just an FYI on the Pineapple Pork Roast...I make the sauce and dump it over the pork roast in the crockpot. I don't bother with the slicing and browning part :)

I am also going to try this for dessert one night this week. YUM!!!

I am getting a gallon of blueberries this week from my sister-in-law's co-worker (who grows them on his farm), so there will also be a blueberry cobbler one day this week! YUM!!!

I have been truly blessed with a wonderful husband. He is an excellent provider and father to my children. He always takes the time to listen and play with the kids, and he makes them each feel special daily. They could not have a better dad!

My father-in-law is also terrific! He is a strong man, a provider, a leader, and just a nice guy to be around. Thanks for raising a good, capable son!

We don't get to see my husband's step-father much these days since my mother-in-law passed away, but we love him all the same. He is a very funny guy and the most loving man I have ever met. He is unconditional with his love and would give you the shirt off his back.

My daddy is battling cancer right now but doing well. I am glad to have him this Father's Day and hope to celebrate many more with him. I love you, Dad!

So, we have lots of dads in our family to celebrate today! I hope you and yours celebrate today and have a fun one!

Menu Plan Monday

Yesterday was my day off from work so I tried to stay off the computer. I took the kids to see UP at the theater. It was a really cute movie, and I would highly recommend it to anyone with kids!

Here's the menu plan for the week:

Monday - Italian Chicken, Spaghetti Salad, Roasted Corn on the Cob

Tuesday - Pepper Steak, Rice

Wednesday - Pork Roast, Mashed Potatoes, Broccoli

Thursday - Apricot Chicken, Wild Rice, Peas

Friday - Tacos, Spanish Rice

Saturday - Not sure yet

Sunday - Getting together with family


The Monday recipes are from Lisa Smith, who hosts a wonderful cooking show here locally called Everyday Manna. On each episode, she cooks a complete meal, usually with at least one side and/or dessert. The recipes are extremely family friendly. Check out her site!

Another week! School's out here and we have Vacation Bible School this week. It will be a fun one! Here's what's on the menu:

Monday - Chicken Rice Casserole

Tuesday - BBQ Ribs (Crock Pot), Pasta Salad, Broccoli

Wednesday - Tacos, Spanish Rice

Thursday - Peach Chicken (substituting for apricot preserves...let's see how it goes), Mashed Potatoes, Peas

Friday - Meatloaf, Mac & Cheese, Greens

Saturday - Pizza

Sunday - Will probably go to visit my in-laws or eat out
